Grape production is considerably lower than specified in the official specification, and this is achieved by pruning and thinning the bunches during the veraison period (late July). Average production is 300-500 kg grapes per hectare according to the age of the vineyards and the planting system. The grapes are picked by hand, in several stages to ensure that they are perfectly ripe and healthy.
