EXTRA VIRGIN OLIVE OIL Protected Designation of Origin, "Terre di Siena" The oil: "Terre di Siena" is one of the first Italian D.O.P.s for oil. This demonstrates its unequivocal vocation for quality production. Along with the terroir par excellence, our own work plays a vital role: hand-picking, and pressing at a controlled temperature immediately after the harvest. This is how we obtain our extra virgin olive oil with typical characteristics of the best Sienese production. Cultivars: Leccino, frantoio, moraiolo. Training system: "Conical trunk" in recently planted olives. The enormous, beautiful older trees present more problems in harvesting, but are incomparably attractive to see.
