SANT'ANTIMO CABERNET Controlled designation of origin The wine: Not just a Cabernet, but much more: a Cabernet from Montalcino! Put together the Montalcino terroir and a famous "international" vine variety that is most successfully expressed in Tuscany, and this wine will be the result: rich, smooth, aromatic and charming. Features of the land: Sandy, clay soil with fossils. Planting density: 3,500 plants per hectare in the old vineyards, 5000 in the new ones. Training system: cordon-trained and spur-pruned and Guyot system. Vine varieties: 100% Cabernet Sauvignon. Vinification techniques: Light pressing, fermentation in stainless steel at a controlled temperature of 28-30° with racking and délestage; maceration after fermentation for 25 days. Ageing techniques: 12 months in barriques and at least 12 months in bottles. Ageing prospects: 10-15 years, during which it will improve in balance. Accompaniments with food: Like all great red wines, Cabernet Sauvignon is a good accompaniment for rich, typically Mediterranean dishes, tasty cured meats and mature cheeses.
