A brief sojourn in French oak enhances the qualities of the grapes, while allowing the aromas of the fruit to remain clearly defined. Features of the land: Sandy, clay soil with fossils and Pliocene marl. Planting density: 3,500 plants per hectare in the old vineyards, 5000 in the new ones. Training system: cordon-trained and spur-pruned. Vine varieties: Sangiovese, Cabernet Sauvignon, Merlot, Montepulciano. Vinification techniques: Light pressing, fermentation in stainless steel at a controlled temperature of 26-28°C; maceration for 15-18 days. Ageing techniques: 8-10 months in barriques, then at least 3 months in bottles. Ageing prospects: Several years in the bottles will enhance the harmony of the aromas and improve the balance of this wine. Accompaniments with food: Thanks to the typically fruity smoothness of this wine it is suitable for a wide range of combinations ranging from moderately heavy first courses to well-structured main courses.
